Abstract:
In this presentation I will give recent materials- and food science examples on how we have used NMR to obtain information about the structure, conformation, and dynamics of various types of disordered solids ranging from lipids and food powders to single-atom catalysts. The key in these studies has been to design NMR experiments that are able to answer the particular questions given the challenges imposed by such disordered solid samples.
